Ingredients

1-pint milk

    1 cinnamon stick

      2 tablespoons sugar

        2 tablespoons butter

          Pinch salt

            4 tablespoons flour

              Little cold milk

                2 eggs

                  ½ lb short or flaky pastry

                    Cinnamon

                      sugar

                        Instructions

                        • Bring milk, cinnamon stick, sugar, butter, and salt to a boil. Remove cinnamon stick.
                        • Blend flour smoothly with a little cold milk. Pour boiling mixture onto this stirring well.
                        • Return to saucepan, stir until it boils, and cook for 5 minutes.
                        • Cool slightly and add well-beaten eggs.
                        • Reheat for a few minutes but be careful that the mixture does not curdle.
                        • Line an ovenware dish with the pastry. Pour in the custard mixture. Sprinkle with some sugar and cinnamon powder. Bake in a hot oven for about 20 minutes.

                        Variations
                        If preferred, replace the cinnamon with either Almond essence or Vanilla.
