Tomato Bredie

A delicious Cape Stew

Ingredients

2 medium onions

    3 tablespoons oil

      1 kilogram neck of lamb

        1 kilogram sliced tomatoes

          1 teaspoon salt

            ¼ teaspoon freshly ground black pepper

              ½ cup water

                Small piece finely chopped chilli

                  2 teaspoons sugar

                    Instructions

                    • Brown onions lightly in heated oil.
                    • Cut meat into small pieces and add to onions.
                    • Brown quickly for a few minutes.
                    • Add all ingredients except sugar.
                    • Cover tightly and simmer slowly for 2 hours.
                    • If necessary add extra water to avoid the stew from drying out.
                    • Add sugar just before serving.

                    Notes

                    Serve with rice or mashed potatoes.
