Ingredients
1-pint milk
1 cinnamon stick
2 tablespoons sugar
2 tablespoons butter
Pinch salt
4 tablespoons flour
Little cold milk
2 eggs
½ lb short or flaky pastry
Cinnamon
sugar
Instructions
Bring milk, cinnamon stick, sugar, butter, and salt to a boil. Remove cinnamon stick.
Blend flour smoothly with a little cold milk. Pour boiling mixture onto this stirring well.
Return to saucepan, stir until it boils, and cook for 5 minutes.
Cool slightly and add well-beaten eggs.
Reheat for a few minutes but be careful that the mixture does not curdle.
Line an ovenware dish with the pastry. Pour in the custard mixture. Sprinkle with some sugar and cinnamon powder. Bake in a hot oven for about 20 minutes.

VariationsIf preferred, replace the cinnamon with either Almond essence or Vanilla.
